Three Easy Weeknight Meals to Cook in Your McKinney, TX Home

If preparing dinner at home keeps falling to the end of your to do list and you want to enjoy some quality family time in your McKinney, TX home, check out these easy dinner meals that don’t require too much time OR effort! You will be relaxing on the porch feeling the cool fall breeze in no time.

Grilled Salmon with Lime Butter Sauce
Makes 6 servings
Total time: 45 minutes

What you’ll need:
6 (6-oz) pieces center-cut salmon fillet (about 1 inch thick) with skin, 1 1/2 teaspoons finely grated fresh lime zest, and 6 tablespoons lime butter sauce.

How to make it:
Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes. Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.

Summer Chicken Sauté with Tomato-Basil Sauce
Makes 2 servings, can be doubled
Total time: 30 minutes

What you’ll need:
1 tablespoon olive oil, 2 skinless boneless chicken breast halves, 1 shallot (chopped),
1 1/2 cups chopped seeded tomatoes, 1/4 cup dry white wine, 1 tablespoon drained capers, 1 teaspoon brine reserved, and 2 tablespoons chopped fresh basil.

How to make it:
Heat olive oil in heavy medium skillet over medium-high heat. Sprinkle chicken breast halves with salt and pepper. Add chicken to skillet and cook until golden and cooked through, about 5 minutes per side. Transfer to plate. Add chopped shallot to same skillet; sauté 30 seconds. Stir in tomatoes, white wine, capers, and caper brine. Boil until tomatoes release juices, about 4 minutes. Stir in chopped basil. Season sauce with salt and pepper. Return chicken to skillet. Cook until warmed through, spooning sauce over chicken, about 1 minute. Transfer chicken with sauce to 2 plates.

Fresh Tuna Tacos
Makes 4 servings
Total Time: 25 minutes

What you’ll need:
1/3 cup sour cream, 1/4 cup chopped red onion, 3 tablespoons chopped cilantro, 1 teaspoon minced canned chipotle chilies, 1 8-ounce ahi tuna steak, cut into 3/4-inch pieces, 1 tablespoon taco seasoning mix, 1 tablespoon vegetable oil, and 4 taco shells

How to make it:
Mix first 4 ingredients in small bowl. Place tuna in medium bowl; sprinkle with taco seasoning. Heat oil in heavy medium skillet over medium-high heat. Add tuna; sauté about 3 minutes for medium. Reduce heat to medium-low. Stir in sour cream mixture. Cook just until heated through, stirring frequently, about 2 minutes (do not boil).

Heat taco shells in microwave 20 seconds. Fill taco shells with tuna mixture.
